
Ingredients simple amazing slow cooker tortilla soup
3 medium Frozen chicken breast
1 medium Bag frozen corn
1 can Black beans drained and rinsed
1 can Green enchilada sauce (small)
1 can Diced tomatoes (large with juice)
1 can Ortega chilies (large)
32 oz Chicken broth
2 clove Minced garlic
1 Salt and pepper
1 tbsp Cumin (but I add a bit more because I like it)
1 slice Bag of tortilla chips (I prefer the hint of lime)
1 small Sour cream
1 Avocado
1 bag shredded cheddar cheese

Put all ingredients (except the cheese, chips, avocado and sour cream) in the crock pot and cook on low for 6-8 hours. The longer the better. Take the chicken out toward the end, shred and put back in the pot. The longer it goes the better. Serve with shredded cheese, crushed tortilla chips, a dollop of sour cream and some fresh avocado slices on top. Enjoy.
