
Ingredients quinoa chili
1 can Black beans
1/2 cup cilantro
1/2 tsp ground coriander
1 1/2 cup fresh or frozen corn
4 clove garlic
4 each Red chiles
1 small juice of lime
1 can tomatoes paste
2 large tomatoes
1/2 tsp Cayenne pepper
2 1/2 tsp Chili powder
1 1/2 tsp paprika
1/2 tsp ground coriander
1/2 tsp freshly ground black pepper
1/2 tsp freshly ground salt
2 tsp cumin
1 tbsp extra virgin olive oil
1 1/2 cup water
2 cup cooked quinoa
how to make quinoa chili
Cook 2 cups of quinoa while you prep the other ingredients.
Once the quinoa is cooked , place it in a deep sauce pan with the other ingredients.
Cover pan and cook on medium for 20 min . Stir occasionally. Reduce heat and cook on low for 10 min.
Enjoy with some toasted naan bread or your favorite rice.
