Ingredients red beans rice tortilla casserole


1 packages Zatarain's Red Beans & Rice
1 can (8 3/4 oz )whole kernel corn drained
1 can (4 1/2 oz) chopped green chilis undrained
6 (8 in) flour tortillas
2 cup shredded cooked chicken
2 cup shredded cheddar cheese
1 Assorted toppings: such as sour cream salsa and chopped onion (optional)

how to make red beans rice tortilla casserole


PREPARE rice mix as directed on package. Add corn and green chilis. Mix well.


SPREAD 1/2 cup of the rice mixture on the bottom of a 13x9 inch baking dish sprayed with non-stick cooking spray. Top with 3 of the tortillas, overlapping as needed. Layer with 1/2 each of the remaining rice mixture, chicken and cheese. Repeat layering with remaining rice mixture, chicken and cheese.


BAKE in preheated 350deg F oven 15 minutes or until heated thru. Let stand 5 minutes before serving. Serve with assorted toppings, if desired
