cucumber raita



Ingredients cucumber raita


1 cucumber peeled seeded and grated or chopped
1 cup plain non fat yoghurt
1 tsp chopped mint leaves or as an alternative cilantro or corriander leaves
1/2 green chilli seeded and chopped
1/4 tsp ground cumin
1 clove crushed and chopped garlic
1/2 cup or half a red pepper seeded and chopped
1 pinch of salt

how to make cucumber raita


Squeeze some of the juice or strain the grated or chopped cucumber and add it to the yoghurt.


Mix the rest of the ingredients to the yoghurt mix,


Other vegetables can be added such as onion and carrot,


Add a few corriander or mint leaves as a garnish, serve chilled.


Great with poppadoms or roti bread, and spicey foods.
