
Ingredients baked potatoe soup
2 medium potatoes-baked
3 tbsp olive oil extra virgin
1 large carrot-chopped
1/2 onion chopped
1 clove garlic-minced
1 salt and pepper to taste
2 cup chicken broth
2 cup milk
1/2 can corn
3 tbsp flour
5 slice bacon cooked and crumbled
how to make baked potatoe soup
In olive oil, saute onion and carrots until onions are translucent.
Add chicken broth and bring to boil. Turn heat down to medium low and simmer 20 minutes until carrots are tender.
Add corn and potatoes. Add salt and pepper.
Add milk and flour constantly stirring for 2 minutes until thickened.
Add crumbled bacon and dill (optional). I add dill to give it that something extra.
