6 oz rich short crust pastry or
6 sheets rich short crust pastry .
1 egg
2 egg yolks
1/4 cup caster sugar
1 1/4 cup milk
1 tsp vanilla essence
1 nutmeg for final dusting .
how to make ladybirds baked custard tarts
lightly grease foil cases and roll out the chilled pastry to about 4mm and cut it to fit 6 , 3cm x 8cm foil tart cases and press them in lightly to mould to the cases .
to make the filling : whisk the egg , egg yolks and sugar together to well combined then add the milk and vanilla essence and combine all .
place premade pastry cases on a baking tray and then carefully pour the custard mix into pastry cases to within quarter inch from the top , now sprinkle them all on the tops with the nutmeg .
place prepared tarts into a preheat oven at 200°C / 400°F for the first 15 minutes then turn the heat down to 180°C \ 360°F to finish cooking , about 20\25 minutes or until just set .
remove from heat and let cool , best after refrigeration to cool completely . serve and enjoy . :-)
