
Ingredients chicken corn and lime soup
1 tbsp vegetable oil
1 cup white onion dice
2 clove garlic cloves minced
3 cup chicken stock
1 1/2 cup tomatoes peeled seeded dice
1 1/2 cup corn kernels
2 each jalapeno chiles seeded minced
1 tsp cumin ground
1 cup chicken thigh meat fat trimmed thinly sliced
3 tbsp cilantro chopped
1 1/2 tbsp fresh lime juice
salt
pepper
how to make chicken corn and lime soup
Heat oil over medium heat, add onion and garlic, cook 8-10 minutes or until very soft.
Add chicken stock, tomatoes, corn, chilies, and cumin, bring to boil, reduce to simmer, and cook 5-8 minutes to blend flavors.
Add chicken and simmer about 3 minutes to cook meat.
Stir in cilantro and lime juice.
Correct seasonings.
